Abstract

UD Do’a Bunda is an SME (small medium entrepreneur) engaged in duck livestock and producers of its salted eggs located at Kebonsari village Candi Sidoarjo. Pak Musolin, the owner of UD Do’a Bunda, conveys that one method in producing salted eggs is by steaming. And the steaming process is still using a conventional one. It is a steamer pot and stove with LPG as fuel. It spends about 4 hours for steaming 300 eggs with the rupture or cracks risk reaches approximately 20 % which is about 90 eggs in each production process. Thus, the partners needs a steamer tool that able to reduce the rupture or crack risk on the salty eggs. It is MEKUTUS. It consists of three rooms namely boiler room, eggs room and circulation room. In keeping the temperature not exceed the limit specified, 70 ° C - 90 ° C, the tool is equipped with automated temperature controller, a digital temperature controller, as an input and chimney exhaust fog as output. The next stage is the manufacturing process in order to get MEKUTUS machine that works optimally. Then we do trial in MEKUTUS. The result is the faster process of steaming to be 2 hours. And the rupture or cracking risk of the eggs can be minimized. In other hands, it increases the quality and quantity of the salty eggs.
